“Nutty carrot layer cake is a must-have at my house for Easter every year,” shares Charles Grayauskie, FIRST associate food editor. “And this elegant showstopper is an easy bake, thanks to jazzed-up cake mix and a creamy orange-infused canned frosting. To make: I prepare 1 (15.25 oz.) pkg. of spice cake mix with 3 eggs, 1 cup of water, 1⁄3 cup of oil, 2 cups of grated carrots and 1⁄2 cup of chopped walnuts, then bake per box directions for two 8" round pans. Next, I stir 1 Tbs. of grated orange zest into 1 (16 oz.) can of cream cheese frosting. I frost the cake, then decorate with blanched carrot ribbons. The moist cake with tangy frosting is the perfect finish to our holiday meal.”
