breakfast

California egg breakfast Gently cook two eggs over easy until the yolks are just set. Serve alongside three strips of bacon and half an avocado, sliced.

snack

Chocolate strawberri­es In a double boiler, melt 5 oz. semisweet chocolate, stirring often. Dip 1 lb. of strawberri­es into chocolate. Drizzle with Greek yogurt.

lunch

Beans & greens Sauté chopped onions and garlic for 3 min. Add 2 cups kale until wilted. Add 15 oz. cannellini beans and 3⁄4 cup chicken stock. Cook for 10 min.

dinner

Beef roast Serve 3 oz. roast beef with mashed cauliflowe­r, sauteed green beans and boiled corn on the cob. Garnish with dried cranberrie­s and walnuts.
