breakfast
California egg breakfast Gently cook two eggs over easy until the yolks are just set. Serve alongside three strips of bacon and half an avocado, sliced.
snack
Chocolate strawberries In a double boiler, melt 5 oz. semisweet chocolate, stirring often. Dip 1 lb. of strawberries into chocolate. Drizzle with Greek yogurt.
lunch
Beans & greens Sauté chopped onions and garlic for 3 min. Add 2 cups kale until wilted. Add 15 oz. cannellini beans and 3⁄4 cup chicken stock. Cook for 10 min.
dinner
Beef roast Serve 3 oz. roast beef with mashed cauliflower, sauteed green beans and boiled corn on the cob. Garnish with dried cranberries and walnuts.
