Snow Pea Sauté

Spring veggies get an elegant upgrade with an easy white wine sauce—for a no-alcohol version, substitute vegetable broth
2 Tbs. olive oil
3 small red onions, cut through core into 1⁄2" wedges
1 lb. snow peas, trimmed
11⁄2 cups cherry tomatoes, halved 1⁄4 cup dry white wine
2 cloves garlic, chopped
1⁄2 tsp. chopped fresh thyme Fresh thyme sprigs (optional)
1 In skillet, heat oil over mediumhigh heat. Add onions; cook until just soft, about 4 min. Add snow peas; cook until almost tender, about 2 min.
2 Add tomatoes, wine, garlic and chopped thyme; cook until wine evaporates and tomatoes start to soften, about 2 min. Season to taste with salt and pepper. Arrange on serving platter. If desired, garnish with fresh thyme.
