Roasted Cheddar Potatoes

Buttery-rich Yukon gold potatoes topped with melted cheese make for an extra-special side dish
11⁄2 lbs. Yukon gold potatoes,
cut into 11⁄2" pieces
3 Tbs. butter, melted
1 Tbs. oil
1 tsp. garlic powder
1⁄2 cup shredded Cheddar cheese
1 Heat oven to 375°F. On large rimmed baking sheet, toss potatoes with butter, oil, garlic powder, 1 tsp. salt and 1⁄2 tsp. pepper; spread out potatoes in single layer.
2 Roast potatoes, tossing occasionally, until tender when pierced with fork, about 45 min. Sprinkle with Cheddar cheese and roast until melted, about 2 min.
