White Chocolate Pudding
ACTIVE TIME: 20 min. TOTAL TIME: 21⁄2 hrs. SERVES: 4
2 cups milk
4 oz. white chocolate, chopped
3 Tbs. cornstarch
1⁄2 tsp. vanilla extract
Palmier pastries or cookies (optional)
In medium pot, whisk together milk, chocolate and cornstarch. Over medium-low heat, cook, stirring, until chocolate is melted and mixture is smooth. Increase heat to medium; bring to boil, stirring constantly. Cook, stirring, until thickened, 2 min. Remove from heat. Stir in vanilla. Divide among 4 (6 oz.) glasses. Cover; chill until set. If desired, serve topped with palmiers or cookies.
Berry-licious variation: For an even more scrumptious pudding, substitute almond or raspberry extract for the vanilla and serve the puddings topped with assorted fresh berries.
