Golden Potato Mash with Thyme

We made these creamy spuds heart-healthy by swapping out butter for cholesterol-free olive oil
2 lb. Yukon Gold potatoes,
peeled, cut into small pieces 1–11⁄4 cups low-sodium chicken
broth
1⁄4 cup olive oil
1⁄2 cup chopped scallions 2 Tbs. minced fresh thyme Sliced scallions (optional)
1 In pot, cover potatoes with salted water; over high heat, bring to a boil. Over low, cook until tender, 10–14 min. Drain. Return to pot over low.
2 Mash potatoes. Stir in 1 cup broth, oil, chopped scallions and thyme until blended, adding extra broth if needed. Season with salt and pepper. Top with sliced scallions.
