Cauliflower Crust Pizza

We used smoky chorizo sausage in place of pepperoni to make this fresh veggie-crust take on a favorite even more irresistible
8 oz. mozzarella
cheese
1 lb. fresh cauliflower 1⁄4 cup grated
Parmesan cheese 1 egg, beaten
1⁄3 cup pizza sauce
1 (2 oz.) link smoked
chorizo, sliced
1⁄4 cup drained roasted
red pepper strips
1⁄4 cup sliced red onion Chopped fresh basil
1 Heat oven to 400°F. Grease baking sheet. Shred half of mozzarella; slice remaining. In food processor, in batches, pulse cauliflower until “rice” forms; transfer to microwave-safe bowl. Microwave in 2-min. intervals, stirring, until tender. Let cool. Stir in shredded mozzarella, Parmesan and egg.
2 On baking sheet, shape cauliflower mixture into 12" round. Bake until golden, 15–20 min. Top with sauce, chorizo, remaining cheese, peppers and onion. Bake until cheese melts, 8–10 min. Sprinkle with fresh basil.
