We dipped drumsticks in ranch dressing then cheesy almond flour for a tasty, crispy coating

Heat oven to 400°F. Grease rimmed baking sheet. In bowl, mix almond flour, cheese and 1⁄4 tsp. pepper. Dip chicken into dressing, then flour mixture. Transfer to baking sheet. Coat with cooking spray. Bake until no longer pink near bones, 30–35 min.

In nonstick skillet, heat oil over medium heat. Add beans, mushrooms and 1⁄4 tsp. salt. Cook, stirring, until tender, about 10 min., adding tomatoes after 5 min. If desired, serve chicken with additional dressing for dipping.

Turkey Lettuce Cups

1 Tbs. olive oil

1 lb. ground turkey 1 Tbs. grated peeled

fresh ginger

1 clove garlic, minced 1⁄2 cup sugar-free barbecue sauce 8 leaves bibb lettuce 2 scallions, sliced

1 red jalapeño, sliced

Grated ginger adds instant zing to ground turkey simmered in sugar-free BBQ sauce

In large nonstick skillet, heat oil over medium-high heat. Add turkey, ginger and garlic; cook, stirring and breaking apart with a wooden spoon, until no longer pink, 7–8 min.

Stir in barbecue sauce and 1⁄4 cup water; reduce heat to medium-low. Cook until flavors blend, about 5 min.

Dividing evenly, fill lettuce with turkey mixture. Top with scallions and jalapeño.
