Scallion-Topped Chaffles

This waffle twist, made with eggs, cheese and almond flour, cooks up crisp with a fraction of the carbs
6 eggs
3 cups shredded mozzarella 3⁄4 cup almond flour
1 tsp. baking powder 2 scallions, chopped
1 Coat waffle iron with cooking spray; heat to medium-high. In bowl, beat eggs; add cheese, almond flour and baking powder. Stir until just combined. Stir in chopped scallions.
2 In batches, pour 1⁄4-cupfuls into waffle iron; close lid. Cook until set, 3–4 min. If desired, garnish with sliced scallions.
Easy variation
Cheddar-bacon: Omit the scallions. Replace 1 cup mozzarella cheese with 1 cup grated Cheddar. In nonstick skillet, cook 3 slices bacon over medium-high heat until crisp; chop. Mix with cheeses and remaining ingredients. Continue with recipe as directed.
