Lemony Green Bean & Tomato Toss

Garlic and scallions give bottled dressing a pop of brightness
11⁄2 lbs. green beans, trimmed
2 Tbs. bottled sugar-free lemon pepper dressing, such as Tessemae’s
1⁄2 cup diced tomato
1⁄4 cup minced onion
2 scallions, minced
1 clove garlic, minced
1 In large pot of salted boiling water, cook green beans until just tender, about 3 min. Drain; rinse under cold water until cool. Pat dry with paper towels. In large bowl, toss green beans with 1 Tbs. dressing until coated. Transfer to serving plate.
2 In bowl, toss tomato, onion, scallion and garlic with remaining dressing until coated. Season to taste with salt and pepper. Serve beans topped with tomato mixture.
