Berries ’n’ Cream Parfaits

Fluffy cream cheese filling, fresh fruit and keto-friendly cookies layer up to a deliciously easy treat
1 (8 oz.) pkg. cream cheese,
at room temp.
1⁄2 cup Swerve granulated sugar
replacement
2 cups heavy cream
1 tsp. vanilla extract
16 keto vanilla wafer cookies,
such as ThinSlim, crushed
11⁄2 cups strawberries, trimmed,
chopped
3⁄4 cup + 2 Tbs. blueberries Raspberries (optional) 1 On medium speed, beat cream cheese and Swerve until fluffy, 2 min. On low speed, gradually beat in heavy cream until blended. On mediumhigh speed, beat until stiff peaks form.
2 Dividing evenly, place crushed cookies in bottoms of 6 (8 oz.) dessert glasses. Dividing evenly, pipe or spoon 1⁄3 of cream cheese mixture over cookies. Continue layering, alternating strawberries, cream cheese mixture and 3⁄4 cup blueberries, ending with cream cheese mixture. Cover; chill until ready to serve.
