Almond Pancakes

8 eggs

1 (15 oz.) cont. ricotta cheese

1 cup super-fine blanched almond flour 2 tsp. vanilla extract

1 tsp. baking powder

Mixed berries and mint sprigs (optional)

Heat oven to lowest setting. In bowl, whisk together eggs, cheese, almond flour, vanilla and baking powder. Coat griddle with cooking spray; heat over mediumlow heat. In batches, drop batter by 1⁄4 cupfuls onto hot griddle. Cook until lightly browned, flipping once, 2–3 min. per side. Transfer to rimmed baking sheet; keep warm in oven in between batches.
