Apple-Broccoli Salad

Prep this refreshing salad up to a day in advance to allow the broccoli time to soak up the zesty dressing

1 large head broccoli

1⁄4 cup plain Greek yogurt

2 Tbs. olive oil

2 Tbs. red wine vinegar

1 tsp. grated orange zest 1 large apple, cored, diced

1⁄4 cup finely chopped red onion 1 Tbs. chopped fresh mint

1 Cut broccoli into florets. In large pot of salted boiling water, cook broccoli until just starting to soften, about 2 min.; drain. Rinse under cold water until cool; drain.

2 In large bowl, combine yogurt, oil, vinegar and zest; add apple, onion, mint and broccoli. Toss until evenly coated with dressing. Season to taste with salt and pepper.
