The Aussie chef says you can make the brightly flavored sauce ahead—just cover, chill, then bring to room temperature when ready to serve
Prepare grill for medium-high direct-heat cooking. Grate 1 tsp. zest and squeeze 2 Tbs. juice from lemon. In food processor, combine parsley, cilantro, oil, onion, garlic, pepper flakes, tsp. salt, lemon zest and juice. Pulse until finely chopped; reserve.
Sprinkle steaks with tsp. salt. Grill, flipping once, 3–4 min. per side for mediumrare or until desired doneness. Let stand 5 min. before slicing. Serve with sauce.
