Strawberry Mousse

1 (3 oz.) pkg. strawberry gelatin mix 1 cup unsweetened cranberry juice 2 cups strawberries, trimmed, diced
2 cups thawed frozen whipped topping,
from 8-oz. cont.
Fresh mint leaves (optional)
In pot, bring 1 cup water to a boil; transfer to bowl. Stir in strawberry gelatin mix until dissolved; stir in cranberry juice. Divide strawberries evenly among 4 (8 oz.) glasses. Top with half of gelatin; chill. Cover bowl with remaining gelatin; chill until thickened, about 45 min.; fold in whipped topping. Divide among glasses. Chill until ready to serve. If desired, garnish with fresh mint just before serving.
