Peach-Raspberry Crisps

1⁄3 cup peach preserves

2 Tbs. butter, melted

1⁄2 tsp. vanilla extract

1 lb. peaches, peeled, pitted, cut into

1 cup raspberrie­s

12 Italian amaretti or vanilla wafer cookies,

broken into pieces

Heat oven to 350°F. Coat 4 (6 oz.) baking dishes with cooking spray; place on rimmed baking sheet. In bowl, combine preserves, butter and vanilla; stir in peaches and raspberrie­s. Divide fruit mixture evenly among dishes. Bake until fruit is tender, 20 min., topping with cookies during last 5 min. of baking time.
