Trick to evenly cook chicken

Boneless chicken breasts come uneven in thickness, so getting the thicker parts to cook without the thinner edges drying out can be tricky. Next time, place the breast between 2 sheets of plastic wrap. Then, starting at the center of the thickest part and working out to the edges, use a heavy-bottom pot to gently pound the meat to uniform thickness.
