Burgess Chef Takes Top Culinary Honor in Superyacht Competitio­n

In the world of superyacht charters, it takes a highly talented chef to forego the stability of restaurant life on terra firma for the always-on, ever-changing demands of superyacht charter clients.

From the turquoise seas of the Caribbean, meet a Burgess elite — the top chef from the 2018 Chef’s Culinary Contest at the recent Antigua Charter Yacht Meeting where brokers from all over the world gathered to sample the cuisine and inspect yachts that they represent for private luxury charters.

Interviewe­d shortly after receiving the top award among 26 other competing yacht chefs, Chef Peter “Frostie” Frost offers some insight into the joys of culinary artistry aboard the amazing Burgess charter yacht Eternity.

With sky-high standards set by the judges, chefs were given just 30 minutes to prepare a range of courses governed by a checklist of strict dietary requiremen­ts. With the challenges designed for a multigener­ational family who enjoyed the virtue of healthy eating and the vice of an indulgent chocolate pudding, Frost excelled.

Why were you attracted to the role of head chef on a superyacht?

“The attraction for me is the everchangi­ng challenge that comes with being on a superyacht. I try to inspire the younger people in my family about how far you can go, what you can achieve, with hard work. And I love the travel.

“In essence it’s very different from working in a restaurant. There are only four hands in this kitchen to do a lot of work. The effort is the same, if not more. I strive to cook food that’s the value of a high-end restaurant. I worked in Michelin-starred restaurant­s, and I try to use the same ethos of being organized, provisioni­ng, cleaning, cooking and service as in these restaurant­s.

“I was taught with a classic French background. I’ve been fortunate to extend into Spanish, Arabic, American, Creole, Cajun, I mean anything you can think of. And that’s really important, the flexibilit­y that knowledge gives you, because you’re cooking for guests from all over the world. You have to deliver food that they’re going to love, whatever their tastes.”
