In-N-Out, the West Coast burger chain she inherited from her grandparen­ts, closed indoor dining at its California locations this spring but kept paying its employees. The company, which claims to have invented an early drive-thru window, is surviving off its drive-thru business. Famous for slow-and-steady expansion, In-N-Out still plans to open three outposts in Colorado this fall, the first locations east of Arizona.
