In-N-Out, the West Coast burger chain she inherited from her grandparents, closed indoor dining at its California locations this spring but kept paying its employees. The company, which claims to have invented an early drive-thru window, is surviving off its drive-thru business. Famous for slow-and-steady expansion, In-N-Out still plans to open three outposts in Colorado this fall, the first locations east of Arizona.
