The meat in­dus­try’s virus trou­bles, with out­breaks at pro­cess­ing plants na­tion­wide, have trans­lated into rapid growth for this on­line butcher. With more peo­ple or­der­ing gro­ceries on­line and cook­ing at home, sales will likely hit $10 mil­lion, up from $5.5 mil­lion in 2019. Carter, 38, and Peisker, 35, founded it in 2010 as a Nashville shop known for high-qual­ity meat. It works with lo­cal farms, pro­cesses all its meat and hand-cuts every piece. In 2017 it be­gan shipping across the coun­try.
