Cre­at­ing a re­sort on a his­toric prop­erty can be a daunt­ing task, but at Ch­ablé, a lux­u­ri­ous Mex­i­can prop­erty about 30 min­utes out­side Mérida, the team has nailed it. Guests ar­rive at a 19th cen­tury manor house, an age-old build­ing set on 750 acres of a for­mer sisal—or agave—plan­ta­tion. Ac­com­mo­da­tions, how­ever, are very much of the 21st cen­tury. Out­side, in­di­vid­ual pool vil­las are sur­rounded by lush green­ery, out­door show­ers, and ham­mocks; and in­side, floor-to-ceil­ing win­dows make it seem like you’re sleep­ing in the jungle. A world-class spa fea­tures Mayan-in­spired treat­ments, as well as yoga and med­i­ta­tion, and the op­por­tu­nity to have a heal­ing ses­sion with a shaman.
