The delicious taste, high protein count (almost 9 grams per egg), large size and sometimes allergy-friendly nature of duck eggs make them real winners in my humble opinion.

we tell our customers they can use duck eggs for any recipe requiring chicken eggs. You can fry duck eggs, boil them, scramble them, whip them into incredible omelets, and add them to pancakes and quick breads.

The official ratio is 3 to 2; if your recipe calls for three chicken eggs, substitute two duck eggs. duck eggs also store quite a bit longer than chicken eggs, thanks to their thicker shells.
