Buttermilk Waffles

Use your leftover buttermilk for some

great-tasting waffles, and then dollop some

homemade butter on top!

INGREDIENT­S

• 1 cup all-purpose flour

• 1 cup whole-wheat flour

• ½ to 1 tablespoon cinnamon • 1 tablespoon sugar or

1⁄2 tablespoon raw honey

• 4 teaspoons baking powder

• 1⁄4 teaspoon salt

• 2 large eggs

• 1 3⁄4 cups buttermilk

• 1⁄4 cup vegetable oil

• 1⁄4 cup applesauce

• 2 teaspoons vanilla

PREPARATIO­N

Combine flours, sugar (if using), cinnamon, baking powder and salt. Add wet ingredient­s, including honey (if using), and mix well with electric mixer. Scoop mixture onto hot waffle iron according to manufactur­er’s recommenda­tion, and cook until done.

Freeze leftovers for up to three months.
