Buttermilk Waffles
Use your leftover buttermilk for some
great-tasting waffles, and then dollop some
homemade butter on top!
INGREDIENTS
• 1 cup all-purpose flour
• 1 cup whole-wheat flour
• ½ to 1 tablespoon cinnamon • 1 tablespoon sugar or
1⁄2 tablespoon raw honey
• 4 teaspoons baking powder
• 1⁄4 teaspoon salt
• 2 large eggs
• 1 3⁄4 cups buttermilk
• 1⁄4 cup vegetable oil
• 1⁄4 cup applesauce
• 2 teaspoons vanilla
PREPARATION
Combine flours, sugar (if using), cinnamon, baking powder and salt. Add wet ingredients, including honey (if using), and mix well with electric mixer. Scoop mixture onto hot waffle iron according to manufacturer’s recommendation, and cook until done.
Freeze leftovers for up to three months.
