The Pomegranat­e Mimosa

Sparkling wine (see note) Pomegranat­e juice (see note) Pomegranat­e seeds (see note) Angostura bitters

Instructio­ns: Portions depend on the size of your glass.

Fill your flute about 1½ inches from the top with sparkling wine. Add pomegranat­e juice until drink is the shade of red you prefer, ½ an ounce or so for smaller flutes, more for larger ones. Add a small spoonful of pomegranat­e seeds; they will sink, creating a nice, dark layer. Add 3-4 dashes bitters.
