It’s difficult to determine exactly how many choices each of us has to make every day, but some estimates range as high as 35,000. Since there are only 86,400 seconds in one 24-hour period and adults spend about a third of it sleeping, that allows only about a second and a half per decision. Add the fact that American supermarke­ts carry around 50,000 different items, and you begin to see how hard food shopping has become for consumers and how important it is for producers to influence our shopping decisions. In many cases they achieve this by making false promises that motivate us to buy what they’re selling. Canned tomatoes, for example, often come in packages clad in the red, white, and green of the Italian flag, but they were most likely grown elsewhere. Any tomato labeled “San Marzano,” the most famous plum tomato from Italy, is supposed to be grown in the rich volcanic soil at the base of Mount Vesuvius, but only about 5% of San Marzano tomatoes sold in America are actually authentic; the rest are all fakes. Fraudulent tomatoes are one thing, but adulterate­d meat is another. In September of 2016 police in China seized a shipment of beef and chicken that had been soaked in toxic bleach to increase its weight by up to 50%. The incident was simply the latest in a string of Chinese food scandals that have included rice with high levels of cadmium and milk contaminat­ed with melamine to increase its apparent protein content. In that incident more than 50,000 babies were hospitaliz­ed and six died. But China is not alone in marketing foods that can damage health.
