Kid-friendly Keto Pancakes

This simple three-ingredient recipe provides one to two mini-pancakes or many silver dollar-sized ones. Top pancakes with whipped cream or butter. Syrup choices include Walden Farms sugar-free pancake syrup or a few drops of Davinci pancake syrup flavoring, which may be mixed with butter.

Ingredient­s

30 grams macadamia nuts

2 large eggs

6 grams oil (almond, avocado, macadamia or olive)

Finely chop macadamia nuts in a blender. Mix egg and oil together and then add to chopped macadamia nuts. If desired, add 3 drops vanilla extract and dash of cinnamon to the mixture. Spray a nonstick skillet with an oil spray. Drop batter onto the heated pan in desired size circles. Flip with a spatula when browned.
