Re “An appetite for service,” Column One, Feb. 29

One of the Taix restaurant waiters profiled by The Times, Bernard Inchauspe — Basque but smart enough to maintain his thick French accent — has unending charm. I have loved him ever since he first served us more than 20 years ago, and my husband has no objection.

I once gave Bernard a copy of a photo I took of a shepherd wearing a Basque knit hat corralling dozens of sheep along Highway 395 east of the Sierra. He has never forgotten it and greets me with kisses on both cheeks.

If he ever retires from Taix, he would do very well running a charm school for men.
