ROMESCO SAUCE

Combine ¾ cup unsalted almonds, cashews or walnuts; 2 Tbsp red wine vinegar; 1 Tbsp tomato paste; ½ tsp smoked paprika ;½tsp red

pepper flakes ;½tsp kosher salt; ½ tsp freshly ground black pepper; 6–8 large fresh basil leaves; 2 roasted red bell peppers from a jar, drained; and 1–2 peeled garlic

cloves in a high-powered blender or food processor. Blend 1 minute or until smooth. With motor running, stream in ¼ cup extra-virgin olive oil, blending until smooth. Taste; adjust seasoning. Makes about 1 cup.
