SPRING PEA PESTO

Combine 1 (10-oz) package frozen peas, thawed; 1⁄3 cup fresh basil leaves; 1⁄3 cup fresh mint leaves; 1 peeled garlic clove; juice of1 lemon ;½tsp red pepper flakes and kosher salt and freshly ground black

pepper in a food processor. Pulse 45 seconds or until peas are broken down and chunky. Scrape down sides. Pulse 10 seconds. Taste; adjust seasoning. Makes about 1 cup.
