FOR CANAPÉS: Com­bine 16 ounces

sour cream, 6 ounces shred­ded ched­dar

cheese, 1 cup finely chopped scal­lions (from about 6), and 1 ½ cups crum­bled cooked bacon. Spoon 1 to 2 teaspoons mix­ture each onto smashed potato crisps (for recipe, see page 97).

FOR DIP: Stir 2 tablespoons

whole milk into sour- cream mix­ture, and serve with potato chips.
