FOR CANAPÉS: Combine 16 ounces
sour cream, 6 ounces shredded cheddar
cheese, 1 cup finely chopped scallions (from about 6), and 1 ½ cups crumbled cooked bacon. Spoon 1 to 2 teaspoons mixture each onto smashed potato crisps (for recipe, see page 97).
FOR DIP: Stir 2 tablespoons
whole milk into sour- cream mixture, and serve with potato chips.
