Bizarre Foods star An­drew Zim­mern will open his first restau­rant this Oc­to­ber in Min­neapo­lis. A life­long pas­sion for re­gional Chi­nese food drives the menu. Ex­pect hand-pulled noo­dles, dim sum, Chi­nese bar­be­cue (and a tiki bar).

Is­raeli and James Beard semi­fi­nal­ist Ben Poremba got his kitchen in­spo from his Moroc­can mom. She moved to St. Louis to help plan the menu—surely the only one in town list­ing craft cock­tails and hand-rolled cous­cous.

Jonathan Brooks’ Milk­tooth is In­di­anapo­lis’ holy grail of break­fast. At his sopho­more restau­rant, the chef's in­ven­tive­ness shines in dishes like a grilled cu­cum­ber salad tossed in vinai­grette made of the cuke’s charred skin.
