Queen Spice Quinoa Salad
Turmeric is often called the “queen of spices.” Let this recipe be your guide to inviting its vibrant yellow hue into all sorts of interesting dishes.
Makes 8 servings
2 cups quinoa, washed and drained 3 ½ cups water 1 tablespoon ground turmeric 1 teaspoon salt
Dressing: 1 teaspoon garlic powder 1 tablespoon maple syrup 1 tablespoon Dijon mustard Juice and zest from 1 whole lemon ½ cup extra-virgin olive oil 3 Gala apples, diced 1 English (seedless) cucumber, diced ¼ cup chopped flat-leaf parsley ½ cup crumbled feta cheese
Prep time: 20 minutes. Cook time: 30 minutes. Total time: 50 minutes.
In a medium saucepan, combine quinoa, water, turmeric and salt. Bring to a boil, then reduce to a slow simmer and cover with a tight-fitting lid. Simmer 15 minutes, turn off heat and let sit 15 minutes more, then fluff with a fork and allow to cool slightly.
While quinoa cooks, prepare dressing by combining all ingredients in a jar with a tight-fitting lid. Shake well. Pour dressing over quinoa.
Fold in apples, cucumbers, parsley and feta cheese. Serve room temperature or chilled.
