Queen Spice Quinoa Salad

Turmeric is often called the “queen of spices.” Let this recipe be your guide to inviting its vibrant yellow hue into all sorts of interestin­g dishes.

Makes 8 servings

2 cups quinoa, washed and drained 3 ½ cups water 1 tablespoon ground turmeric 1 teaspoon salt

Dressing: 1 teaspoon garlic powder 1 tablespoon maple syrup 1 tablespoon Dijon mustard Juice and zest from 1 whole lemon ½ cup extra-virgin olive oil 3 Gala apples, diced 1 English (seedless) cucumber, diced ¼ cup chopped flat-leaf parsley ½ cup crumbled feta cheese

Prep time: 20 minutes. Cook time: 30 minutes. Total time: 50 minutes.

In a medium saucepan, combine quinoa, water, turmeric and salt. Bring to a boil, then reduce to a slow simmer and cover with a tight-fitting lid. Simmer 15 minutes, turn off heat and let sit 15 minutes more, then fluff with a fork and allow to cool slightly.

While quinoa cooks, prepare dressing by combining all ingredient­s in a jar with a tight-fitting lid. Shake well. Pour dressing over quinoa.

Fold in apples, cucumbers, parsley and feta cheese. Serve room temperatur­e or chilled.
