Beer mustard and beer jelly, red velvet quick bread, fry bread, Mexican street corn, kiwi daiquiri jam, loaded Tater-Tots, a grilled cheese grill-off. A Poundcake Worth Pinning class will use Pinterest to choose the top eight entries, which then will be judged at the fair.

As usual, there are contests geared specifical­ly to kids, competitio­ns sponsored by Wisconsin companies and promotion boards, and national contests. National contests include two each from King Arthur Flour, Gold Medal Flour and Spam. As of press time, Albanese was still hoping to snare one or two more sponsored contests, including a national one with a $500 top prize.

One of the reasons for adding last year’s Bloody Mary contest was to attract new entrants, Albanese said, and it worked. Three of the four top winners were firsttime competitor­s.

Overall, last year was a good year for the culinary competitio­n; 168 entrants competed with 1,350 entries, compared with 134 entrants and 1,120 entries in 2014.

Entries for 2016 are being accepted starting Sunday. Online entries close at 7 p.m. June 8; mailed entries must be postmarked by June 8.

For food-loving fairgoers who don’t plan to enter but want to get in on the fun, the contests will be judged on four days: July 27 and July 30 (before the fair opens) and Aug. 5 and Aug. 7 during the fair. The last day features both cocktail competitio­ns and six other major contests. State Fair runs Aug. 4-14.

————— When Hormel Foods judged the 26 winners of last year’s Great American Spam Championsh­ip from state fairs across the country, a Wisconsin woman emerged as the grand prize winner.

Lisa Dziadulewi­cz of Sheboygan won a $3,000 all-expensespa­id trip for two to the Spam Jam Waikiki Festival in Hawaii at the end of this month for her Gemütlichk­eit Spamwich, which first won at the Wisconsin State Fair. The schnitzeli­nspired sandwich, on a pretzel roll, is a nod to the Midwest’s broad German heritage, and more specifical­ly Wisconsin’s.

“As a college student, I used to cook Spam (products) on a hot plate in my dorm,” the mother of four says in a news release. “I rediscover­ed it cooking with my children.”

This year’s Spam contest — both the adult and kids division — features a sweet-and-savory theme.
