Triple Crown Pie

This recipe for a classic pie for the Derby is from Flour de Lis Bakery.

Makes 8 servings

2 large eggs, whisked

1 ounce unsalted butter, melted

1⁄2 cup dark corn syrup

1⁄2 teaspoon vanilla extract

1 ounce bourbon

1⁄2 cup packed brown sugar 1 tablespoon plus 1 teaspoon flour

1⁄4 teaspoon kosher salt

1 cup pecan halves or pieces

1/3 cup chocolate chips

1 unbaked piecrust

Preheat oven to 350 degrees.

In a medium bowl, whisk together eggs, butter, corn syrup, vanilla and bourbon.

In a separate bowl, whisk together brown sugar, flour and salt. Add dry ingredient­s to wet mixture and whisk until completely mixed.

Pour pecan pieces and chocolate chips into a 9-inch pie shell. Pour filling into pie shell and use a spatula to gently mix everything together.

Place the pie on a sheet pan and bake in preheated oven 45 to 50 minutes, until filling is set. Allow to cool before serving (plain or with whipped cream or ice cream, if you wish).
