Asparagus-Puff Pastry Bundles

Makes 8 servings

1 sheet pre-made puff pastry, thawed

1 egg whisked with 1 tablespoon water

3 ounces prosciutto 1 pound asparagus, ends trimmed

1/3 cup shaved Parmesan cheese

Pepper to taste Preheat oven to 425 degrees. Line a large sheet pan with parchment paper.

Out a lightly floured surface, roll out the puff pastry to a large rectangle about twice its size. Square off edges and cut into 8 (about 5-inch) squares.

Whisk together egg and water in a small bowl.

To make the bundles, take a square of puff pastry and brush with egg wash. Place a slice of prosciutto on top, followed by 3 stalks of asparagus and a scant tablespoon of Parmesan cheese. Season with pepper to taste. Wrap prosciutto around asparagus, then wrap with the puff pastry. Fold one side of the pastry over the asparagus. Then take the opposite corner and fold that over the asparagus so the pastry will overlap. Press to seal using more egg wash. Brush the top of the puff pastry with more egg wash.

Bake until puff pastry is golden and puffed, about 15 minutes. Let cool 3 to 4 minutes and serve.
