Banana Baked Oatmeal

Makes 12 servings

5 cups old-fashioned rolled oats

3 cups milk

3 mashed overripe bananas (about 1 cup)

1⁄2 cup (1 stick) melted butter or coconut oil

1 ⁄2 cup sugar

1 teaspoon ground cinnamon

1⁄2 teaspoon salt

Preheat oven to 375 degrees.

Combine all ingredient­s in 13-by-9-inch baking dish, using a potato masher to mash bananas, and mix well. Bake in preheated oven 15 to 20 minutes, then switch oven to high broil for 5 minutes to brown the top.

To make ahead: Refrigerat­e mixture overnight, then add a little additional milk in the morning (optional). Place pan in oven while oven preheats, then bake as directed.
