1 To make chipo­tle mayo: mix to­gether the light may­on­naise, chipo­tle pow­der, gar­lic pow­der and lemon juice.

2 To make veni­son burg­ers: mix veni­son, eggs, bread­crumbs, and salt and pep­per with your hands un­til com­bined.

3 Form eight pat­ties, about ¼-pound each. But­ter each of the burger buns.

4 Grill the burg­ers and but­tered buns for about three min­utes per side, or un­til the burger reaches 145°F for medium-rare.

5 As­sem­ble burg­ers with de­sired top­pings.
