Cookie Dough Snack Balls
MAKES 25 1-INCH SNACK BALLS 1½ cups unsweetened coconut flakes ½ cup nut butter of choice or peanut butter (those with nut allergies may use sunbutter) ½ cup coconut oil, melted or softened 1 teaspoon pure vanilla extract ⅔ cup mini chocolate chips
Combine all the ingredients except mini chocolate chips into a bowl and stir until well incorporated. Add mini chocolate chips. Roll out into bite-sized balls (about 1 inch). Refrigerate or freeze until hardened, about 5 minutes. Eat and enjoy! Keep any leftovers in the fridge or freezer. Source: primallyinspired.com
PRO TIP: •To make this even easier, just spread the mixture into an 8x8-inch, parchmentlined baking pan. Refrigerate until hardened, and cut into squares.
