From mixologist Yusef Austin of Troy Liquor Bar in the West Village (675 Hudson St., 212-699-2410) 2 ounces white rum infused with vanilla bean 1½ ounces fresh watermelon juice ¾ ounce fresh lemon juice High-proof rum, to float on top

Shake white rum and juices with ice and strain into a martini glass.

Float the high-proof rum over the back of a bar spoon.

Light rum with a match and allow it to burn for about 10 seconds so that vanilla aromas infuse the cocktail.
