Eben Freeman sets your glass on fire with the snap of a finger — literally.

For the Negroni with a Flamed Twist, the bartender takes an orange peel between his thumb, index and middle fingers, then strikes it against the sulfurous tip of a match by snapping his fingers together “quickly.” No matchbook needed. “People shouldn’t be afraid,” assures Freeman. “The flame isn’t going to get on them.” Then, the flaming peel is dropped into the cocktail, crafted with equal parts of Bombay Sapphire gin, Campari and Dolin Rouge vermouth.

“Don’t use a lighter, it’ll blow those propane flames onto the glass,” says Freeman, adding that amateur mixologist­s can avoid getting charcoal stains on the glass if they keep the twist away from the top of the rim.
