Plank Smoked Old Fashioned, $20 at American Cut

Bartender David Boswill loves playing with fire.

For his Plank Smoked Old Fashioned at this Tribeca spot, he uses Woodford Reserve bourbon, caster sugar, housemade bitters and a maple wood plank to smoke the glass.

He wanted to bring the flavor of a backyard barbecue to this steakhouse’s cocktail — minus the mess.

“Nothing is more American than bitters and bourbon,” says Boswill, who came up with the patriotic recipe. “It’s a barbecue [lover] and bourbon drinker’s dream.”

First, he smokes a glass by setting fire to a section of a maple plank, and holding the cup upside down over the plank. Then he extinguish­es the flame with the glass, trapping the smoke.

Boswill then fills the glass with 2½ ounces of bourbon and a spoonful of simple syrup, along with bitters.
