Critical violations are defined as items relating directly to factors that lead to food-borne illness and must be corrected immediately. Noncritical violations are defined as items that relate to maintenance of food operations and cleanliness.
BENTON COUNTY Aug. 1 The Buttered Biscuit

Critical violations: An employee’s drink cup did not have a lid. An employee filled a squeeze bottle with water from the handwashing sink.
Noncritical violations: A cardboard box of red potatoes was stored on the floor. A food employee was not wearing a proper hair restraint.

Critical violations: The person in charge was not available at the time of inspection. Employees were not lathering with soap long enough while washing hands; an employee did not wash hands between tasks. The front handwashing sink was obstructed with a bucket of soapy water. Lettuce was stored at room temperature. Food in the prep table was not at 41 degrees or below; food in the walk-in cooler was not at 41 degrees or below. Items were not date-marked as needed, repeat violation.
Noncritical violations: Containers of food for the salad bar were not covered in cold holding. The dishwasher needs cleaning. The shelves in the walk-in cooler need cleaning.
