Critical violations are those factors leading to foodborne illness and must be corrected immediately. Noncritical violations relate to maintenance of food operations and cleanliness.

Employees in the kitchen area were not wearing masks. Manager stated that they do not wear masks in the kitchen but do when interacting with customers. Customers in the establishment at the time were already seated with food on the table, thus did not have a mask.

Neither employee preparing food or the employee waiting on customers washed their hands between tasks. Employee preparing food washed hands at the three-compartment sink using the sprayer hose. Egg rings and other utensils stored in a plastic container on what appears to be the shelf for clean dishes. Employee did not know why they were on the shelf. Sausage and egg patties on the roll rack at room temperature. These items either need to be time stamped or kept at 41 degrees or below. Multiple cases of raw shell eggs sitting at room temperature. Eggs must be kept refrigerated at all times. Open packages of ham and turkey exceed manufacturer’s use-by date. No date-marking on the open packages of ham and turkey when they were opened. No time indicated for kolaches, croissant, sausage biscuits or burritos. These items are using time as a control not to exceed four hours after removed from oven or assembled. Noncritical violations: Employees do not know if there are any test strips to check sanitizer concentration on location. No test strips were found. Back storage area where flour and other items used for the establishment are stored with personal items and personal boxes. Posted retail food permit has expired and operating without a valid permit. Lids for coffee cups, unwrapped straws and creamer/sugar containers are out for customer self-service. During covid, these items cannot be available for selfserve as set up in this establishment. No signs indicating that masks are required.
