One pan of spuds datemarked 1/3 exceeds the allowable use-by date of seven days. Open employee food in the server’s refrigerat­or and on top of the area where sauce cups are being filled.

Core violations: Obtain additional thermomete­r to check ambient air temperatur­e of hot-boxes. Open case of frozen corn in the walk-in freezer stored under the area of a condensati­on leak. Open package of brownies in the walk-in cooler is not covered. No sanitizer concentrat­ion registerin­g on test strip for container wiping cloths are stored in. Shelves in the walk-in cooler are rusty and no longer in good condition. Interior and exterior of the walkin cooler door and handle are visibly dirty with food debris. Exterior door of the walk-in freezer is visibly dirty with food particles/spices. Ice buildup on the walk-in freezer door preventing the door from closing properly and adding to the issue for frost on shelves/cases.
