Priority violations: Employee came into the kitchen area and did not wash hands prior to putting on gloves. Employee did not wash hands or change gloves after handling raw hamburger. Sanitizer concentration at the three-compartment sink was not being dispensed strong enough. The same concentration was used for sanitizer towel buckets as well. Gravy date/ time stamped for today was still at 104 degrees after two hours. Queso datemarked yesterday was at 55 degrees. Mashed potatoes date-marked yesterday were at 43 degrees. Mashed potatoes and queso in the walk-in from previous days were at 43 degrees. Floor squeegee handle was leaning against the small ice scoop at the kitchen servers station.
Priority foundation violations: Date-marking on the food items had a discard date that was eight days after preparation. Servers working with open food/ice were wearing fingernail polish and not wearing gloves. Big ice scoop was stored on the noticeably unclean top of the ice machine. Core violations: There was standing water in the bottom of the kitchen prep table. Sanitizer concentration is not strong enough in the solution wiping cloths were being kept in. Used ice cream scoop was sitting on the servers table at room temperature. Floor squeegee handle was stored leaning up against the ice machine door and touching the ice scoop. Permit posted was expired.
