SUNDAY Family

Treat the family to Beef Kebabs With Dipping Sauce with brown rice and roasted cauliflowe­r. Heat oven to 450F. Combine 8 cups bitesize sliced cauliflowe­r florets, 2 tablespoon­s olive oil, and coarse salt and pepper to taste. Toss to coat. Spread on nonstick foil-lined baking sheet. Roast 25-30 minutes, stirring once, until browned in spots. For dessert, buy a carrot cake.

The plan: Save 2 kebabs for Monday.

For Florentine ravioli, cook 20- to 24-ounce package frozen light ravioli, according to directions. Heat 2 teaspoons olive oil in skillet on medium. Add 4 cloves minced garlic; cook 30 seconds. Add teaspoon coarse salt,

teaspoon crushed red pepper, 16-ounce bag frozen chopped spinach and cup water. Cook 5-7 minutes. Divide among 4 bowls; top with ravioli and drizzle 1 teaspoon olive oil over each portion. Serve with freshly grated Parmesan. Add lettuce wedge..

WEDNESDAY Budget

Use your slow cooker for Sweet & Spicy Asian Pork Shoulder over jasmine rice. Add a mixed green salad on the side. Pears are just the right dessert.

SATURDAY Easy Entertaini­ng

Chicken, Bell Peppers & Polenta is a great meal for guests. Add spinach salad. Make peach shortcakes for dessert. Halve and toast 2 biscuits. Place a biscuit half, cut side up, on each of 4 plates. Toss 1 cup sliced peaches with cup all-fruit peach preserves. Cover and microwave on high 10-15 seconds. Top each biscuit half with of the peach mixture. Finish shortcakes with fat-free vanilla ice cream and light whipped cream.
