Maple cinnamon applesauce
Prep: Peel and core 3 Gala apples and 3 Pippin or Granny Smith apples; cut into 2-inch chunks. Place 6 tablespoons maple syrup, 1 tablespoon cinnamon and 1 tablespoon fresh lemon juice in a large heavy nonaluminum saucepan over medium heat. Cook: Cover; simmer until the apples are slightly softened, about 12 minutes. Uncover; cook, stirring occasionally to break up the large pieces, until the apples are soft but there is still some texture, 7-10 minutes. Adjust the seasoning with more syrup, ground cinnamon, and/or lemon juice, if you like. Remove from the heat; let cool. Chill before serving.
