Yield: 24 servings Filling: cup each: butter and shortening cup granulated sugar cup evaporated milk tablespoon vanilla extract Cake: large eggs teaspoons vanilla cup whole milk cup butter cups sugar teaspoon salt teaspoons baking powder cups all-purpose flour 1. For filling, blend butter and shortening; 10 minutes. Slowly add sugar; 5 minutes. Slowly add milk, vanilla; 5 minutes. 2. For cake, heat oven to 350F. Grease two 8-inch square cake pans or baking dishes or use a 13-inch by 9-inch by 2-inch pan. Beat eggs and vanilla 1 minute, then add other items one at a time, beating 1 minute after each addition. Pour into pans. Bake 30-35 minutes (40-45 minutes in oblong pan), or until pick inserted in center comes out clean. Cool in pan. 3. It’s best to use cake when it’s slightly frozen — about 30 minutes in the freezer works best. Cut cake into 1 1/2-inch by 3 1/2-inch bars. Put bottom side of each bar on wax paper, spread half of bars with filling and top with unfrosted bar, sandwich style.
