MX Taco offers specials, more ways to celebrate Cinco de Mayo

That’s because the holiday originates from the state of Puebla, where Ortega grew up.
“When I was younger, I remember loving it because we were the only city getting the holiday and there was no school,” she explains. “Then, in college, I volunteered for the tourism department during Cinco de Mayo and loved how we had visitors from Europe and the U.S. just for this one day. I felt so proud!”

In fact, Ortega herself is a Poblano.
It’s what one calls a person from Puebla. Not unlike those meaty, mild peppers, which also hail from this region.
“The dish is commonly confused as having something to do with the peppers, but that’s a misnomer,” says Ryan Manning, chef/owner of MX Taco. “It’s just called ‘mole poblano,’ because it’s
