MAKES 4 Servings INGREDIENTS
2 lb salmon fillets ¼ cup honey 3 cloves garlic, minced 2 tbsp reduced-sodium soy
sauce 1 tbsp seasoned rice vinegar 1 tbsp coconut oil 1 tbsp freshly grated ginger 1 tsp Sriracha, optional freshly ground black pepper,
to taste 2 green onions, thinly sliced pinch sesame seeds
DIRECTIONS Preheat oven to 375 F. Line a baking sheet with foil. In a small bowl, whisk together honey, garlic, soy sauce, rice vinegar, coconut oil, ginger, Sriracha (if using) and pepper (to taste). Place salmon on prepared baking sheet and fold up all 4 sides of foil to make a packet. Spoon honey mixture over salmon, then fold foil overtop of salmon and seal packet closed. Bake 15 to 20 minutes, or until cooked through. Open foil and broil 2 to 3 minutes, or until caramelized and slightly charred. Garnish with green onions and sesame seeds.
